Mayonaise: we know that it’s not very common for non-Belgians to order mayo with their fries but trust us, once you’ve tried it you will be hooked! If you ever come across a frituur that sells homemade mayonnaise, please do not hesitate to order it. Good (Belgian) mayonnaise is made of egg yolks, mustard, vinegar, oil, pepper and salt and has a very subtle yellow colour. If you have doubts about whether the mayonnaise is homemade or not; just have a look at the consistency (it should be considerably thicker than a dressing) and the colour (not too white).

Tartaar: there aren’t too many frituren that make their own tartaarsaus anymore. If you find one; cherish it! A good frituur that makes a mean tartaarsaus is hard to find. If you want to know whether it’s a homemade sauce or not, just keep an eye out for the small pieces of capers and (whole!) eggs, etc. Usually the sauce has a rough consistency; the smoother it is, the more likely it is not homemade.

(Curry)ketchup: of course everyone is familiar with ketchup but have you ever tried curry ketchup? Most frituren stay faithful to Zeissner’s curry ketchup; it has a gentle curry flavour to it, which makes it a bit spicy, but at the same time it’s slightly sweet. Our favourite sauce for a snack speciaal!

Américaine: a popular sauce that consists of tomatoes, onions, capsicums and a special mix of herbs.

Andalouse: a slightly spicy sauce made of mayonnaise, tomato paste, capsicums, etc.

Samourai: a sauce that can best be described as hot and spicy (red hot chili peppers are used to spice things up).

Pickles: very similar to the famous piccalilly sauce, however the Belgian pickles sauce has a typical twist to it. Try it and be amazed!

Béarnaise: a classic Belgian frituur sauce, made of clarified butter, shallots, tarragon, vinegar, white wine, pepper and just the right amount of lemon juice.

Speciaal: a very popular choice is to get your frieten upgraded to a friet speciaal. This means that you will get freshly chopped onions and your choice of sauces (usually (curry)ketchup and mayonnaise) added to your frieten. Very hard to resist!
